Showstopper Roasted Carrots

'Tis the turkey season and look no further for the best Thanksgiving side dish! My showstopper roasted carrots are packed with all of the flavors and are sweet, salty, nutty and beautiful!


Serving Size - 6

Prep Time - 15 minutes

Cook Time - 25 minutes

Total Time - 40 minutes


Equipment and Utensils

Sheet Pan

Peeler (optional)

Mason Jar

Measuring spoons


Ingredients

Roasted Carrots

2 bundles of carrots

3 tbsp - Olive oil

3/4 tsp - Salt

1/2 tsp - Pepper

Tahini Dressing

2 tbsp - Water (more if necessary)

2 tbsp - Tahini Sesame Paste

3 tbsp - Olive oil

2 tbsp - Lemon juice

1 clove Garlic, minced

Toppings

1/2 cup - Feta Cheese, crumbled

1/4 cup - Dill, chopped

1 cup - Chickpeas, cooked (optional)

Pomegranate Balsamic Glaze

Pomegranate seed, garnish*


I've chosen a bundle of carrots because of their thickness, however, you can use other varieties of carrots (tricolor, sliced.. etc.). Additionally, I did not peel the carrots to maintain the natural earth flavor. If you prefer a softer carrot, I suggest peeling them before roasting!



Roasting Carrots

  1. Pre-heat oven to 400°F (204°C).

  2. Wash and peel* carrots.

  3. Arrange carrots in a single layer on sheet pan. Drizzle in Olive oil, salt and pepper and toss to coat. Roast carrots for 10 minutes. Remove sheet from the oven, turn the carrots and return to the oven for another 10-15 minutes. Test tenderness with fork or knife, it should glide smoothly through.

  4. Allow carrots to rest for 10 minutes before transferring to serving dish.


The carrots are perfectly roasted at the point. If you don't have the ingredients or don't want to dress them up, you can serve them now!



Tahini Dressing

  1. Add water, tahini, olive oil, lemon juice, garlic and salt/pepper, to taste, to your mason jar. *Optional - zest your lemon and add to jar for more citrus flavor.*

  2. Put on the lid and shake well!

  3. Adding more or less water to adjust consistency.


I've used a nutribullet instead of a mason jar to mix thoroughly.



Serving

  1. Gently place carrots on serving dish.

  2. Drizzle with Tahini dressing.

  3. Garnish with all the toppings! Get creative! My favorites are Feta, Dill and Pomegranate Glaze!
