"Make it" Monday - Cucumber Sandwich Skewers

This was a spur the moment recipe because I found my romaine lettuce completely frozen in the draw of the fridge this morning...Note to self: bump up the temp a little bit.


I had been making lettuce "boats" for lunch with salami, chicken, and cheddar cheese. I was really enjoying them. They didn't make me feel weighed down like I do after eating bread.


And then the romaine catastrophe happened. So i had to improvise. And that improvisation turned into these little beauties - The Cucumber Sandwich Skewers!



These are INSANELY easy to make, and my oldest daughter, loves them (she's 5 years old). She pulls off an individual piece, eating them one at a time as she goes. I usually eat a few pieces together at a time.


The ones in the back of the photo with salami and cheese were my daughter's. She wasn't a fan of the buffalo chicken I had bought. But that's the fun of it! You can pretty much use any type of lunch meat and cheese that you want.


Here's what I used:


All the ingredients were from Sam's Club. With three kids, we frequent the bulk supply store because it's just easier.

I can't remember exactly where I got the fancy toothpicks from...I think it was Christmas Tree Shops. But I'm sure you can get them on Amazon or somewhere similar.


Instructions:


- Slice up your cucumber to your preferred thickness...I like them around 1/4" thick. Place the slices into a bowl and set aside.


- Cut your cheddar cheese slices into squares. I cut them across and then perpendicular, so I got 4 pieces out of each slice.


- Slice your salami slices in half.


- Cut your chicken into 1/2" to 1" wide slices.


- Start layering on the toothpick - begin with a cucumber slice, then your preferred combination of toppings. Keep alternating until you get to the top.


You can prep these for the week if you need a quick lunch. I wouldn't prep up any more than 4-5 days ahead or they tend to get a little soggy.


You can use any combination of lunch meat and cheese that you would like. These make great appetizers for parties too!


I really like to have these when I'm trying to keep my carbohydrate intake low. 2 to 3 of them fills me up,
